The Story
We managed to get one of the final barrels of Honey finished Bourbon which was fantastic tasting and an easy favorite. There are almost no honey finished bourbons left at Starlight Distillery. In order to get our name on this we had to make an offer they couldn’t refuse. Instead of breaking some legs – we’re giving the proceeds back to charity.
This special bourbon rests in the honey finished barrel for several months bringing out all the honey goodness it has to offer. This is a highly desirable finish and will not last too long here and on your shelf!
The Taste
On the nose we have a nice vanilla, honey and floral essence with a dash of oak and cinnamon. A very nice but not overpowering honey that is clearly balanced right. The palate is rich with vanilla, honey and sweet sugar. There’s a slight hint of gingersnap cookies with a bit of cinnamon on the tongue. The finish is creamy, fruity and pleasant with a nice lingering mouthfeel that stays sweet and rich. This is has just the right balance of bourbon and honey!
The Story
We were extremely lucky to be able to taste two of the limited Calvados barrels available and immediately became the top choice. This is a full flavored bourbon that nicely highlights the apple and pear notes from the Calvados.
The Taste
The nose on this has an incredible apple pie sweetness, vanilla, pear and granny smith apples with a hint of oak. The palate is rich with summer fruits, plums, cherries, blackberries with some nice lingering spice. This is a full flavored taste! On the finish we get nice hints of pears, luxardo cherries with a hint of lingering spice and some hints of tobacco. The finish is warm and inviting, reminding you of grandma’s secret apple pie!
